Fruit Salad

Ingredients

• 0.25 cup cubed watermelon

• 0.25 cup cubed ripe papaya

• 0.25 cup cubed apples

• 0.25 cup cubed banana

• 0.25 cup cubed pineapple

• 0.25 cup cubed pears

• 1 tablespoon salt

• White pepper to taste

• 1 cup orange juice

• 5 tablespoon honey

• Mint leaves for garnish

Directions

Preparation Time: 10 Minutes

Cook Time: 10 Minutes

Total Time: 20 minutes

 

  1. In a clear glass bowl combine all the fruits.
  2. Pour orange juice and honey over fruits and toss carefully to combine. Garnish with mint leaves and serve in small cups.

 

Chicken Cashew Nut Salad

Ingredients

  • 500 g chicken breast fillet cut into strips thin
  • 1 tablespoon oil
  • 3 cups shredded lettuce
  • 1/2 large onion thinly sliced
  • 1/2 red capsicum cut into strips thin
  • 6 mint leaves torn
  • 1/2 cup coriander leaves only
  • 1/2 cup cashews toasted

Dressing

  • 1 tablespoon fish sauce
  • 2 tablespoon lime juice
  • 2 tablespoon sweet chili sauce
  • 2 red chilies small finely chopped *to taste

Directions

Preparation Time: 10 Minutes

Cook Time: 30 Minutes

Total Time: 40 minutes

 

  1. Heat oil in deep fry pan and fry chicken strips for 3-4 minutes or until cooked through. Remove from pan.
  2. In another bowl mix 1 tablespoon fish sauce, 2 tablespoon lime juice, 2 tablespoon sweet chili sauce and the finely chopped red chilies to create the dressing.
  3. Combine chicken with dressing while still warm and toss with lettuce, onion, capsicum, mint, coriander and cashew nuts.
  4. Serve with fried rice or as an appetizer.

Beans Salad

Ingredients

• 0.25 cup olive oil

• 0.25 cup white vinegar

• 0.5 cup beans

• 1 cup cubed carrots

• 1 cup cubed tomatoes

• 1 cup cubed cucumbers

• 1 cup cubed capsicum

• 0.5 cup baby corn

• salt to taste

Preparation Time: 10 Minutes

Cook Time: 10 Minutes

Total Time: 20 minutes

 

  1. Rinse the beans and baby corn in a bowl.
  2. Cut the carrots, capsicums, cucumbers and tomatoes into small bite sized cubes.
  3. In a different bowl, mix olive well with vinegar and whisk it till it gets thicker.
  4. Pour the dressing over the bowl of salad and toss it well with spoons/chopsticks.
  5. Finally add salt to taste.

 

Pasta salad

Ingredients

• 3 cup boiled macaroni

• 0.5 cup cucumber sliced without seed

• 0.5 cup tomato sliced without seed

• 0.5 cup capsicum sliced

• 0.25 cup carrot slice

• 0.25 cup sweet corn carnel

• 2 whole sausage slices

• 1 whole boiled egg

 

For Cocktail Sauce

• 0.5 cup mayonnaise

• 0.5 cup liquid milk

• 1 tablespoon sugar

• 1 tablespoon tomato sauce

• 0.25 cup freshly squeezed lemon juice

 

Directions

Preparation Time: 30 Minutes

Cook Time: 10 Minutes

Total Time: 40 minutes

 

  1. Mix all the cocktail sauce ingredients together in a bowl and whisk all the ingredients till a thick consistency is formed.
  2. In a separate bowl mix the remaining ingredients together and add 1.5 cup of cocktail sauce. Toss the salad well, to mix the sauce and the ingredients together.
  3. Store in fridge for at least 2 hours. Serve cold.

 

Mint Tomato Salad

Ingredients

• 3 Fresh tomatoes cut into small cubes

• 1 tablespoon Spring onion finely chopped

• 1 piece Green chilli finely chopped

• 0.25 teaspoon Salt

• 1 tablespoon Extra Virgin Olive oil

• 1 cup Chopped mint leaves

• Salad dressing of your choice

Directions

Preparation Time: 10 Minutes

Cook Time: 10 Minutes

Total Time: 20 minutes

 

  1. Take a bowl and mix the salad dressing with olive oil, salt, and chilies.
  2. Now add the spring onions, tomatoes and mint leaves and gently toss with the dressing.
  3. Your healthy salad is ready!

Penne Pasta Salad

Ingredients

• 1 cup penne pasta

• 1 boiled potato cut into cubes

• 1 tomato cut in to cubes

• 1 whole capsicum

• 1 whole apple

• 4 piece sausages

• 4 tablespoon mayonnaise

• 1 teaspoon soy sauce,

• 1 teaspoon chili sauce

• 1 teaspoon sugar

• 2 teaspoon black pepper powder

• 1 teaspoon salt

Directions

Preparation Time: 30 Minutes

Cook Time: 15 Minutes

Total Time: 45 minutes

 

  1. Boil pasta with a teaspoon of salt and drain.
  2. Cut the tomato, potato, capsicum, apple and boiled sausages into cubes.
  3. In a bowl, whisk together mayonnaise, soy sauce and chili sauce, black pepper, sugar and salt.
  4. Now add all the ingredients together in a bowl and mix with 4 tablespoon mayonnaise.
  5. Freeze the salad for at least an hour and serve it cold.
